Atomic Armadillo Eggs

There are lots of folks out there who celebrate meatless Mondays.  Now I’m not saying there is anything wrong with having a meatless Monday but I like to celebrate meaty Mondays.  That is good old USDA approved, stick to your ribs, drips blood when you start to prepare it meat.

This Monday we are featuring Atomic Armadillo Eggs.  The guys at BlackForestBBQ.tv really did us a favor when they shared their superb recipe.  Grab your pepperoni, your peppers, your cheese, your favorite rub, and of course (natürlich) bacon.  Everything tastes better with bacon.  These are called armadillo eggs because the patty formed in this process looks somewhat like a rolled up armadillo.  The atomic part correlates to your choice in peppers – go hot or go home.  And don’t forget you’ve got to drink some good German beer while you are cooking these – low and slow.  Zum Wohl!

Perfectly Cooked Pork Ribs

BLUF: Ribs are done when they’re done.

Perfection in cooked ribs includes many variables – smell, color, appearance, temperature, flavor, texture and the length of the queue lined up waiting to get some.  Today the guys at BBQTalk are sharing their cooking process with us.  Watch as they cook 25 racks of ribs.  These guys may be in Canada – eh – but they are putting out some good ribs.  Give their process a try.  You’ll be glad you did.

Perfectly Cooked Pork Ribs

Rub Recipe as follows:

  • 1/2 cup brown sugar
  • 1/4 cup paprika
  • 1 tablespoon black pepper
  • 1 tablespoon salt
  • 1 tablespoon chili powder
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 2 tablespoons ground cumin

We are pleased to introduce Home Economics as a new offering from the School Of Hard Rocks.  In Home Ec we will explore the preparation of food that every rock head and hard working man can enjoy.  This food is intended to taste good and if you are worried about health concerns, we quote Paula Dean who told Oprah “I’m your cook, not your doctor'”.  Having said that, if you can keep up with the Germans in weightlifting, you can eat all the ribs and anything else you want.
